Step 1. Place alaska salmon fillets on to a baking tray lined with the parchment paper. Tap each salmon fillet with a paper towel and make it dry. Season with salt, pepper and lemon juice.
Step 2. In a bowl add green pesto, you can also use red pesto if you like and breadcrumbs. Mix everything together until you get a smooth mixture and set aside. In a different bowl, add grated cheese and breadcrumbs, and give it a mix.
Step 3. Spread pesto mixture over the salmon evenly, and then top it up with cheese breadcrumb mixture. Bake in preheated oven 10-15 min at 200 C / 400 F. Enjoy with salad, rice or potatoes.
